Cowboy Ragu
Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (14.5-ounce) can beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large Dutch oven or campfire pot, brown the ground beef over medium heat. Drain off any excess grease.
- Add the onion, garlic, and green pepper to the pot and cook until softened, about 5 minutes.
- Stir in the diced tomatoes, kidney beans, black beans, corn, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the stew has thickened.
Tips:
- Best served with shredded cheese, sour cream, and crispy onions.
- Substitute ground beef with chopped steak or venison.
- Add tomato sauce to thicken stew if desired.
