Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn kernels, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups beef broth
Instructions:
- Heat the olive oil in a large Dutch oven over a campfire. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more.
- Add the ground beef and cook until browned, breaking it up with a spoon.
- Drain off any excess fat.
- Stir in the diced tomatoes, kidney beans, corn kernels, oregano, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Reduce heat and simmer for 30 minutes, or until the stew has thickened.
- Serve with crusty bread or crackers.
